Win someone's heart with a cheesecake

On February 14 it is a tradition to send cards to friends and family, but many people like to make something special for a Valentine's Day dinner also. Or it may be enough to make a special dessert, one that you don't make frequently and may require some time and care to put together.

Here is a recipe for cheesecake that would be nice served with frozen strawberries or raspberries at this time of year, and it will look like a festive dessert. It might just be that a cheesecake is the way to someone's heart. Cheesecake 8 double graham crackers, crushed into crumbs 1 1/2 cups sugar 1 teaspoon cinnamon 1/4 pound butter, melted 2 pounds cream cheese, softened 4 eggs 1 1/2 tablespoons lemon juice 1 1/2 teaspoons vanilla 1 pint sour cream Strawberries or raspberries

Stir crumbs, 1/2 cup sugar, cinnamon, and melted butter until well mixed. Press mixture evenly over bottom of a springform pan. Bake at 300 degrees F. for 8 to 10 minutes, or until crumbs are lightly toasted; remove, and turn oven up to 375 degrees F.

Beat cheese until smooth and fluffy, then add 1 cup of sugar gradually, mixing well. Add eggs one at a time, beating after each addition. Stir in lemon juice and 1 teaspoon vanilla and pour mixture over crumbs in pan. Bake at 375 degrees F. about 40 minutes, until done. Make a topping by mixing sour cream with 2 tablespoons suger and 1/2 teaspoon vanilla, and spread over top of cake. Bake at 475 degrees F. Remove cake to cool, and put in refrigerator overnight. Serve strawberries or raspberries in a separate bowl.
