Chocolate Applesauce Cake

1 egg

1 cup plus 2 tablespoons sugar

1/3 cup butter

1 teaspoon vanilla

2 ounces unsweetened chocolate

1 cup applesauce

1 cup plus 2 tablespoons sifted flour

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

Confectioners' sugar

Preheat oven to 325 degrees F.

Beat egg in a mixer until light. Add sugar, butter, and vanilla. Beat until well combined.

Melt chocolate; add to egg mixture. Sift flour, soda, baking powder, and salt together. Stir to blend. Add to egg mixture alternately with applesauce. Beat until batter is smooth.

Pour mixture into a greased and floured loaf pan. Bake for about 50 minutes or until a toothpick inserted in the middle of the loaf comes out clean.

Remove cake from oven and allow to cool in pan; remove from pan and dust with sifted confectioners' sugar.

Makes 1 loaf.

Swedish Apple Pie

4 to 5 Cortland, McIntosh, or Golden or Red Delicious apples, or a combination; peeled, cored, and sliced.

1 tablespoon sugar

1/4 teaspoon cinnamon

12 tablespoons (3/4 cup) butter

3/4 cup sugar

1 cup flour

1 egg

1/2 cup raisins

1/2 cup walnuts

Preheat oven to 350 degrees F.

Fill pie plate 3/4 full with sliced apples. Sprinkle with 1 tablespoon sugar and the cinnamon.

Melt butter in a medium saucepan, mix in 3/4 cup sugar, flour, egg, raisins, and walnuts. Pour mixture evenly over apples and bake 30 to 40 minutes or until apples are soft when pierced with a sharp knife.

Pie may be served warm, topped with vanilla ice cream.

Serves 6 to 8.
