Fresh raspberries in a summer pie

Raspberries can be heard to come by, and when you find them, they are likely to be quite expensive. But for a special treat, it is fun to bake a raspberry pie.

If you live in an area where raspberries grow, check with local agriculture officials and find out if there are places where you can pick your own. Your effort will save you some money and make the pie taste all that much better. Here is our recipe. Raspberry Pie 9-inch double piecrust 4 cups fresh raspberries 2/3 to 1 cup sugar 1/4 cup all-purpose flour 2 teaspoons tapioca 1 to 2 tablesspoons butter

Combine sugar, flour, and tapioca. Gently mix with raspberries. Let stand for 15 minutes. Preheat oven to 450 degrees F. Turn fruit into pie shell. Dot with butter.

Cover pie with well-pricked top crust or lattice crust. Bake for 10 minutes, then reduce heat to 350 degrees F. and continue baking 35 to 40 minutes, until golden brown.
