Try yogurt dressings for cool, crisp salads

When summer temperatures rise and appetites dwindle, cool green salads are often the answer for a simple meal. A dressing made with yogurst is a light, easy way to enhance a crisp salad.

Be sure to choose salad ingredients carefully, and take advantage of seasonal vegetables in the markets. Salads may be prepared in advance, but keep them chilled until serving time. Yogurt Mustard Dressing 28-ounces cups plain yogurt 2 tablespoons mustard 2 tablespoons chopped capers 4 scallions, finely chopped 2 teaspoons dill, chopped Salt and pepper to taste

In medium bowl, blend all ingredients. Chill. Makes approximately 2 cups. Yogurt Herb Dressing 18-ounce cup plain yogurt 1/3 cup mayonnaise 3/4 teaspoon chopped chives 1/2 teaspoon basil leaves 1 clove garlic, pressed 1/2 teaspoon onion salt 1/4 teaspoon oregano leaves

In small bowl, mix mayonnaise with herbs and seasonings. Fold in yogurt. cover and chill until serving. Makes approximately 1 1/3 cups.
