SUNDAY War and Remembrance (ABC, 8-11 p.m.): First of the final five chapters in the network's thickly plotted, world-hopping ``novel for television'' based on the Herman Wouk book. It takes place in World War II and offers portrayals - with varying credibility - of everyone from Roosevelt (Ralph Bellamy) to General von Roon (Jeremy Kemp). Live From Lincoln Center (PBS, 5-7 p.m.): Violinist Pinchas Zuckerman and others join the Chamber Music Society to mark its 20th-anniversary and artistic director Charles Wadsworth's final performance with them. MONDAY War and Remembrance (ABC, 8-11 p.m.). Top Gun (NBC, 9-11 p.m.): The 1987 box-office movie smash stars Tom Cruise as a jet pilot who falls in love with his instructor at the Navy's Fighter Weapons Training School. The US and the Philippines (9-10. p.m.): Start of correspondent-narrator Stanley Karnow's three-part documentary look at the long and involved history of relations between the two nations, including lots of interviews of past and present principals. The first program - ``Colonial Days'' - traces American involvement since it established rule there in 1898.

TUESDAY War and Remembrance (ABC, 8-11 p.m.). Frontline (PBS, 9-10 p.m.): ``Yellowstone Under Fire'' tries to assess the impact of eight years of mineral and timber development at the National Park during the Reagan years.

WEDNESDAY 10 War and Remembrance (ABC, 8-11 p.m.): The final chapter airs Sunday, May 14.
