WORTH NOTING ON TV

FRIDAY Mozart Mystique (PBS, 9-11 p.m.): As the anniversary of the composer's death in 1791 approaches, related TV shows are already breaking out. This one offers the erudite wit of its host, Peter Ustinov, who takes viewers to Mozart country in Germany and Austria and lets them hear samples of what has caused these two centuries of excitement - Mozart's music. MONDAY Siskel & Ebert (CBS, 10-11 p.m.): In their first network special, the duo tear themselves away from straight film reviewing - it's their 14th year together - to host a look at the movie industry itself, using a format that includes interviews with Clint Eastwood, Kathleen Turner, Danny DeVito, director David Lynch, and others.

TUESDAY `Last Flight Out' (NBC, 9-11 p.m.): This made-for-TV movie taps the built-in potential for drama in the frenzied exodus from Saigon as the Vietnam war ended. Richard Crenna and James Earl Jones star in the fact-based story of a group of Americans who engineer the escape of hundreds of civilians.

WEDNESDAY American Playhouse (9-10:30 p.m.): Four Damon Runyon tales - including the title story, ``Bloodhounds of Broadway'' - form this semi-farcical visit to an epic New Year's Eve party in 1928, replete with the Broadway types whom Runyon gave such comic individualism, like the beautiful showgirl played by Madonna.
