VICKIE CHENEY'S McINTOSH CAKE

5 McIntosh apples 1/2 cup sugar 1/2 teaspoon cinnamon 3 cups unsifted flour 2 cups sugar 1 teaspoon baking soda 2 teaspoons baking powder 1 teaspoon salt 4 eggs, unbeaten 1 cup vegetable oil 1/2 cup orange juice 2 teaspoons vanilla Pare apples and cut in thin slices (about 5 cups). Mix sugar and cinnamon, sprinkle over apples, toss lightly, and set aside.

Combine remaining ingredients in large mixing bowl in order listed and blend with electric mixer on low speed for 1 minute, then 4 minutes at medium speed.

Grease a 10-inch tube pan and fill with alternating layers of batter and sliced apples, beginning and ending with batter. There will be 3 layers of batter and 2 of apples.

Bake at 350 degrees F. for 1 1/2 hours. Yield: 16 to 18 servings.

In 2 loaf pans, cook 1 hour 5 minutes. Note: Other favorite all-purpose apples may be substituted.
