CHOCOLATE SOUFFL'E

2 cups milk 3 oz. sweetened or unsweetened chocolate, grated pinch of salt 8 tablespoons sugar 3 tablespoons butter 4 tablespoons flour 4 egg yolks 6 egg whites 1 tablespoon vanilla

Heat milk in pan. Add chocolate, pinch of salt, butter, and half the sugar. Bring to boil. Add flour all at once and stir vigorously. Cook for 3 minutes. Remove from heat, add egg yolks and vanilla. Stir.

Whip egg whites very stiff with rest of sugar. Fold into mixture. Butter nine-inch souffl'e dish and sprinkle with sugar. Put souffl'e mixture in dish, tap on counter to settle. Bake at 300 degrees F. for 20 minutes. Serve immediately with cream or a simple vanilla or fruit sauce.
