Pork Chops With Roasted Tomato Sauce PORK CHOPS: 6 pork chops (about 1-inch thick) Olive oil 6 tablespoons crushed mustard seed Salt and pepper

Brush pork chops lightly with olive oil, coat them in mustard seed, and sprinkle with salt and pepper. Roast in 350-degree F. oven for 20-25 minutes. ROASTED TOMATO SAUCE: 4 large tomatoes, sliced 6 whole garlic cloves, peeled 1 tablespoon oregano, chopped 2 tablespoons olive oil

Combine all ingredients and roast in an oven-proof baking dish in 425-degree F. oven for 18-20 minutes. Puree and keep warm.

To assemble, ladle sauce on plate. Place pork chop on sauce and serve. Serves six.
