Grandma Ada's Apple Pie

FILLING

1 tablespoon lemon juice

6 cups sliced fresh McIntosh apples

1/4 cup all-purpose flour

1/2 cup white sugar

1/2 cup brown sugar

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/8 teaspoon ground cloves

CRUST

2-1/2 cups all-purpose flour

3 tablespoons white sugar

1 tablespoon salt

1 cup shortening

6 to 7 tablespoons cold water

2 tablespoons butter

GLAZE

1 egg white

1 tablespoon cold water

2 tablespoons white sugar

1 tablespoon brown sugar

Filling: Sprinkle lemon juice over apples, and set aside. In separate bowl, mix flour, sugar, and spices. Add to apples, and toss lightly. Set aside.

Crust: Mix flour, sugar, and salt. Cut in shortening until coarse. Add water, and mix gently until moist. Form two balls, and roll one out to line a 9-inch pie dish. Spoon filling into unbaked pie crust. Dot with butter. Roll out second ball, and cover pie. Fold edges of top crust under bottom crust, and flute. Slit top of pie to vent air.

Glaze: Beat the egg white and water. Brush on top of pie. Mix white sugar and brown sugar, and sprinkle over pie. Bake at 450 F. degrees for 10 minutes. Reduce heat to 350 F. degrees, and bake 45 minutes.
