Squash Baked In Its Shell This winter-squash recipe is a favorite with author Carla Emery's family. 2 acorn squash, sliced in half and seeded Filling:

4 slices prefried bacon

Half of a small onion, chopped and sauteed

1/2 cup brown sugar

1/4 teaspoon ground cloves

1-1/2 cups apple, peeled and chopped Mix together filling ingredients. Stuff halved squash with filling and put in a pan with 1 inch of water. Bake in preheated 350-degree F. oven for about 40 minutes or until squash is tender when poked with a fork. Serves 4.

`Pumpkream' Pie This recipe was sent to Carla Emery by reader Esther Shuttleworth.

1 cup sugar

1/4 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon cloves

1/4 teaspoon nutmeg

2 eggs

1 cup pumpkin

1 cup heavy cream or whipping cream

1 9-inch pie crust Combine filling ingredients in order listed. Bake in pie crust, which will be full, for 20 minutes at 425 degrees F. Then reduce heat to 375 degrees F. and bake until it rises and then forms small cracks around the edge.
