Some grilling ABCs

A little prep time before your next barbecue can jazz up any outdoor feast. Here are some basic tips :

Marinades

Remember, the leaner the meat (chicken, fish), the better it is to increase the marinade's oil. For quicker cleanup (and increased flavor), marinate in a plastic bag.

Rubs

For a terrific crispy crust, combine your favorite spices and dried herbs with a bit of oil and pat the mixture onto meat before grilling. Minced garlic, crushed black pepper, and paprika make great additions too.
