Chipotle crusted salmon with triple berry sauce

Grilled salmon is for many a summertime favorite. This recipe offers a unique and delicious take on a classic dish.

Yield: 4 servings
Ingredients:
2 tablespoons brown sugar
3/4 to 1 teaspoons chipotle chile powder
1/2 teaspoon ground cumin
1/4 teaspoon saltCrisco® Original No-Stick Cooking Spray
4 (4 to 5 oz.) salmon fillets with skin on
1/3 cup Smucker's® Orchard's Finest® Northwest Triple Berry Preserves
1/2 teaspoon fresh lime juice
1 tablespoon finely grated lime peel
Directions:
- SPRAY cool grill grates with no-stick cooking spray. Heat grill to medium. Blend brown sugar, chipotle powder, cumin and salt. Coat the skin side of the fish with no-stick cooking spray. Spread rub mixture onto top of fish (not skin side).
- COOK fillets skin side down on grate. Grill fish 12 to 15 minutes or until opaque throughout
- COMBINE preserves with lime juice in a microwave-safe bowl. Microwave 15-20 seconds on HIGH. Drizzle over salmon. Garnish generously with grated lime peel.
