1 pre-made 9-inch pie shell
1 cup fresh currants
1 cup sugar
2 tablespoons water
2 eggs
2 tablespoons cornstarch
1/4 cup sugar
1/2 cup currants
1. In a small sauce pan, combine currants, sugar, and water. Heat over low heat, stirring often, for about 20 minutes.
2. Preheat oven to 350 degrees F. Prepare pre-made pie shell, according to directions.
3. Whisk together eggs, cornstarch, and sugar. Slowly added the heated mixture, stir until combined. Stir in remaining currants.
4. Pour into a pie shell and bake for about 20 minutes or until a crust forms and turns golden.
5. Remove from oven and let cool completely, until the pie sets. Serve.
