Funnel Cake Batter (for coating)
4 large eggs
2-2/3 cups milk
1/2 cup + 2 tablespoons granulated white sugar
5 cups all-purpose flour
1 teaspoon salt
1 tablespoon + 1 teaspoon baking powder
Powdered Sugar for dusting
1. Mix egg and milk together with a wire whisk or fork until combined. Stir in other ingredients until batter is smooth.
Deep Fried Twinkies
1 recipe funnel cake batter
Twinkies
Peanut oil
Powdered sugar
1. Get a roll of paper towels, a wet towel and a dry towel. You'll want to be ready to drain the oil from your foods, wash your hands and dry them all in a hurry.
2. Set oil to 360 degrees F. and prepare batter.
3. Set out plates with paper towels, ready to catch the grease.
4. Unwrap Twinkies and put them on a plate in "ready position."
5. With one hand, dip Twinkie into the batter, roll to coat and scrape excess batter on the side of bowl. Place in fryer gently. You can use tongs for this part, but if you're going to use your hands, make sure to keep one hand dry at all times.
6. Make sure the Twinkies flipped every 30-60 seconds, so they cook evenly. If your deep fryer has a basket, keep it moving so the batter doesn't stick to the wire mesh.
7. Remove from oil, drain excess oil and place on paper towels. Sprinkle with powdered sugar and enjoy while still warm!
